Peel, wash, and thinly slice the onions. Finely chop the green chilies and coriander leaves.
Add the sliced onions, green chilies, and coriander leaves to a large mixing bowl.
Add the besan, paprika, kasuri methi, ajwain, cumin powder, turmeric, black pepper, and salt. Mix until the besan and spices coat the onions evenly.
Keep mixing gently for a couple of minutes. The onions will release moisture and help the besan bind. Add water a few drops at a time only if the mixture still looks dry. Keep the mixture thick.
Preheat the air fryer to 180°C (360°F) for 2 to 3 minutes.
Take a small portion of the mixture, press lightly, and shape into a rough round. Repeat with the remaining mixture.
Place the pakodas in the air fryer basket with space between each one.
Lightly brush the tops with oil.
Air fry at 180°C (360°F) for 15 minutes. Flip halfway through and brush the other side with oil.
When the top layer turns a deep golden brown, they are ready. Remove and serve hot.
