Wash the sweet potatoes properly and peel the skin. Cut them into thin and even strips, about ¼ inch thick. Keep in mind that sweet potatoes are slightly harder than regular potatoes, so use a sharp knife and cut carefully.
Soak the sweet potato strips in cold water for at least 1 hour. This helps remove excess starch and gives better texture after air frying.
Drain the water completely and pat the strips dry using a kitchen towel or paper towel. Removing extra moisture helps them turn crispier.
Transfer the strips to a mixing bowl. Add 2 tablespoon oil, ½ teaspoon paprika, ⅓ teaspoon black pepper, salt to taste, ⅓ teaspoon mixed herbs, and 1 tablespoon of cornstarch. Toss everything well until all the sweet potato pieces are evenly coated.
Preheat the air fryer at 180°C (360°F) for about 2 minutes.
Arrange the sweet potato strips in a single layer inside the air fryer basket. Avoid overcrowding so the fries cook evenly and become crispy.
Air fry at 180°C (360°F) for about 15 minutes, tossing once or twice in between for even cooking and crispiness.
Once the fries turn golden and slightly crispy, remove them from the air fryer and serve hot with your favorite dip or sauce.
