Peel the onions and cut off both ends. Wash them well and pat them dry with a kitchen towel. Slice the onions into rounds about ⅓ to ½ inch thick. Separate each slice into individual rings and place them on a plate.
Crack both eggs into a bowl and beat them well.
In a second bowl or plate, mix the bread crumbs, garlic powder, ginger powder, and salt together.
Take one ring at a time. First, coat it lightly in plain flour. Then dip it into the egg mixture. Finally, press it into the bread crumb mixture and coat both sides well so the crumbs stick properly. You can use your hands or a fork and spoon, whichever feels easier. Repeat with all the rings.
Preheat your air fryer to 350F (175°C) for about 2 minutes.
Spray the air fryer basket with oil. Place the onion rings in a single layer. Do not stack them on top of each other. Spray a little oil on top of the rings too.
Air fry for 8 to 10 minutes. At the 4 to 5 minute mark, flip each ring so both sides get evenly crispy. Keep an eye on the basket in the last 2 minutes so you can adjust the time for your desired crispiness.
Serve hot with mayonnaise, ketchup, or whatever your favorite dip or chutney is. I love to serve these with mixed vegetable mayonnaise.
