 Crispy skinned baby potatoes seasoned with simple spices and air fried until fork tender, a quick kid friendly side ready in under 30 minutes.

Ingredients

  • 250 gm (8 oz baby potatoes)
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon paprika
  • 1/8 teaspoon ginger powder
  • 1/8 teaspoon garlic powder
  • 1/2 teaspoon mixed herbs
  • Oil (for spray)
  • Salt (to taste)

Instructions 

  • Prep the potatoes: Cut the baby potatoes in half, wash well, and pat dry. Let them air dry for 10 minutes.
  • Season: Toss the potatoes with paprika, black pepper, ginger powder, garlic powder, mixed herbs, salt, and a light spray of oil.
  • Preheat: Preheat the air fryer to 400°F (200°C) for 3 minutes.
  • Arrange: Place the potatoes in a single layer, cut side down, skin side up. Avoid overcrowding.
  • Air fry: Cook for 15 minutes, tossing halfway through, until crispy and fork tender.
  • Serve: Serve hot with dipping sauce or mayonnaise.

Notes

  • Bigger potatoes need more cooking time than baby potatoes.
  • Keep the spices light for a kid friendly version.
  • Place potatoes cut side down for faster, even crisping.
  • Don’t overcrowd the basket, or the potatoes will steam instead of crisp.
  • Toss halfway through cooking for even browning on all sides.
