Crispy air fryer sweet potato cubes seasoned with mixed herbs, black pepper, and salt. Ready in 20 minutes of cooking time with a quick cold water soak before.
- 2 medium sweet potatoes (peeled and diced)
- ¼ teaspoon black pepper
- ⅛ teaspoon mixed herbs
- Salt to taste
- Oil spray (approx 1 teaspoon)
Wash and peel the sweet potatoes. Cut into small, even-sized diced cubes using a sharp knife.
Soak in cold water for 20 minutes. Drain and pat fully dry with a kitchen towel.
Add to a mixing bowl with black pepper, mixed herbs, and salt. Spray with about 1 teaspoon of oil and toss well.
Preheat air fryer to 200°C (400°F) for 3 minutes (optional).
Add cubes to the basket in a single even layer. Do not overcrowd. Cook in batches if needed.
Air fry at 200°C (400°F) for 12 to 15 minutes, tossing a couple of times during cooking.
Rest for 5 minutes before serving. Serve with mayonnaise or your preferred sauce.
- Soak in cold water for 20 minutes before cooking. This removes extra starch and helps the edges crisp up.
- Rest for 5 minutes after cooking before serving. The texture and crispiness improves with a short rest.
- Keep the skin on or peel it off. Both work fine. Peeling is my preference.
- Seasoning is optional. Use whatever you like or skip it entirely.
- Do not overcrowd the basket. Cook in batches if you have a larger quantity.
