Crispy air fryer sweet potato cubes seasoned with mixed herbs, black pepper, and salt. Ready in 20 minutes of cooking time with a quick cold water soak before.

Ingredients

  • 2 medium sweet potatoes (peeled and diced)
  • ¼ teaspoon black pepper
  • teaspoon mixed herbs
  • Salt to taste
  • Oil spray (approx 1 teaspoon)

Instructions 

  • Wash and peel the sweet potatoes. Cut into small, even-sized diced cubes using a sharp knife.
  • Soak in cold water for 20 minutes. Drain and pat fully dry with a kitchen towel.
  • Add to a mixing bowl with black pepper, mixed herbs, and salt. Spray with about 1 teaspoon of oil and toss well.
  • Preheat air fryer to 200°C (400°F) for 3 minutes (optional).
  • Add cubes to the basket in a single even layer. Do not overcrowd. Cook in batches if needed.
  • Air fry at 200°C (400°F) for 12 to 15 minutes, tossing a couple of times during cooking.
  • Rest for 5 minutes before serving. Serve with mayonnaise or your preferred sauce.

Notes

  • Soak in cold water for 20 minutes before cooking. This removes extra starch and helps the edges crisp up.
  • Rest for 5 minutes after cooking before serving. The texture and crispiness improves with a short rest.
  • Keep the skin on or peel it off. Both work fine. Peeling is my preference.
  • Seasoning is optional. Use whatever you like or skip it entirely.
  • Do not overcrowd the basket. Cook in batches if you have a larger quantity.
