These are diced sweet potatoes in air fryer. We also call it sweet potato cubes. It comes with several variations. In this recipe, I added simple seasoning like mixed herbs, salt, and pepper.

I make this when I want something easy on the side that does not need much attention. Sweet potato, a little seasoning, the air fryer, and you are done in about 15 minutes of actual cooking time.

Sweet potato diced and sweet potato cubes are the same thing. Do not get confused if you see both names. The dish is the same and it comes with a lot of variations in seasoning and serving style.
The air fryer works really well here because of the high heat and circulating hot air. You cannot get that combination as easily in an oven or a pan.
Soaking the cut sweet potato in cold water for 20 minutes before cooking is an important step. It pulls out extra starch. That is what helps the edges crisp up instead of going soft and sticky in the air fryer. But if you are in a hurry and have no time, you can skip this step.

- Sweet potatoes: Use medium-sized ones for even cooking. Peel them before cutting. The flesh is harder than regular potato, so take your time with the knife.
- Mixed herbs: You can swap this with any seasoning you like or leave it out completely.
- Black pepper: gives a light heat. It works well with the natural sweetness of the potato without overpowering it.
- Oil spray: helps the cubes crisp up and stops them from sticking to the basket. Around 1 teaspoon of oil is all you need for the whole batch.
How to Make Air Fryer Sweet Potato Diced
Here is exactly how I make it every time.
1. Wash the sweet potatoes well. Peel the skin off. Cut them into small, even-sized diced cubes. Use a sharp knife because sweet potato is harder than regular potato. Cut slowly and carefully.

2. Put the diced sweet potato into a bowl of cold water. Soak for 20 minutes. This step removes extra starch and is key for getting crispy edges. You can skip this step if you are short on time.

3. Drain the water and spread the cubes on a kitchen towel. Pat them dry fully. Any leftover moisture will stop them from crisping up in the air fryer.

4. In a mixing bowl, add the dried sweet potato cubes. Add the mixed herbs, black pepper, and salt. Spray with about 1 teaspoon of oil. Toss well until every piece is evenly coated.


5. Preheat the air fryer to 200°C (400°F) for 3 minutes. This step is optional for this recipe but it helps the cubes start cooking immediately when they go in.
6. Add the seasoned cubes to the air fryer basket in a single even layer. Do not overcrowd. If you have a large batch, cook in two separate batches for better results.

7. Air fry at 200°C (400°F) for 12 to 15 minutes. Toss the cubes a couple of times during cooking so all sides get color and heat evenly.

8. Once done, let them rest for 5 minutes before serving. Serve with mayonnaise or any sauce you like.

Tips for Perfectly Diced Sweet Potatoes
- Rest for 5 minutes before serving. Do not serve straight from the air fryer. A short rest after cooking makes them taste crispier and the texture settles better.
- You can keep the skin on. I personally prefer peeling, but it is completely your choice. The skin is edible and adds a slightly different texture. If you keep it on, just wash the sweet potato very well.
- Seasoning is fully optional. The recipe uses mixed herbs, black pepper, and salt. But you can swap these for any seasoning you like, or skip seasoning entirely. The sweet potato tastes good on its own too.

Storage and Reheating
Store leftover sweet potato cubes in an airtight container in the fridge. They stay good for up to 3 days. The texture softens a little overnight but is still good.
To bring back some crispiness, reheat in the air fryer at 180°C (360°F) for 3 to 4 minutes. Do not microwave them as this makes them soft and a little soggy.
