How to Make Air Fryer Crispy Okra
Five steps and one bowl. That’s the whole process.
1. Wash and dry the okra: Rinse the okra well and dry it completely, every strip, before you do anything else. Lay it out on a clean kitchen towel and pat it dry. This step decides whether your okra comes out crispy or soft.
2. Trim and slice: Cut off both ends of each okra, then slice each one lengthwise into 4 thin strips. Thinner strips crisp up faster and more evenly than halves or rounds.
3. Coat the strips: Add the sliced okra to a large mixing bowl. Sprinkle in the gram flour, rice flour, paprika, turmeric, black pepper, ginger powder, aamchur powder, and salt. - Cut into thin strips, not halves: Slicing each okra (bhindi) into 4 strips gives you more surface area, which means more coating and more crunch. Halves take longer to crisp and often come out chewy in the middle.
- Don’t overcrowd the basket: Packing in too many strips traps steam, and steam is the enemy of crunch. One single layer in the basket, or two batches if needed.
- Shake at the halfway mark: At 7 to 8 minutes, shake the basket or flip the strips. The ones sitting on the bottom get more direct heat, so turning them ensures every strip finishes at the same level of golden.
- Check a minute or two early: Every air fryer runs a little differently. Start checking at 12 minutes rather than waiting for the full 15. The strips should be golden with slightly darker edges when they’re done.
